Crunchy Cauliflower, Apple, and Blue Cheese Salad


  • 220 g butter
  • 5 tbsp Cider vinegar
  • 2 tbsp Olive oil
  • 3-4 Apples, cut thinly
  • 1 Small cauliflower, chopped
  • Drizzle of honey
  • 200g Stilton, or you can use a vegetarian cheese if you prefer
  • 50g of sunflower seeds toasted, or walnuts if you prefer
  • Hand full of alfalfa sprouts
  • Fresh mint leaves, chopped


Make the dressing by whisking the vinegar, olive oil and honey with some seasoning. Pour over the sliced apple then gently mix in the cauliflower, alfalfa sprouts and cheese. Scatter over the mint and the toasted seeds before serving.
